Globetrotter, restaurateur, and chef to the stars Chris Borges has returned to New Orleans to serve as Executive Chef of Josephine Estelle, the flagship restaurant of the Ace Hotel. After completing Stanford pre-med and taking a run at medical school, Borges found his true calling in the farmers’ markets and restaurants of Northern California. He parlayed his passion and skill into several culinary adventures, including founding an Indian restaurant, studying cuisine abroad, and cooking for Silicon Valley digerati, celebrities, and statesmen.
